Liang fen is made by mixing mung bean starch with water until smooth, pouring the batter into a boiling pot through a sifter until well cooked, setting aside until cooling down to jelly.

Liang fen is jade white, crystal clear; tender, refreshing and smooth. Poem goes: As fresh as ice, as slippery as fish; You feel it in the mouth, you feel it with the teeth; To hearts’ content, let it be thin or thick; Oh, simply refreshing and cool, nothing beats.
